Most tender of all lamb and cut from the bone-in rack, lamb rib chops bones are typically not exposed. Lamb rib chops can also be frenched and the bone is hand cleaned. The rib chop has a little more fat than the loin chop and that makes it more flavorful.When frenching 8 bone lamb racks the customer will get 2 portions out of one side of the rack.
